CHOCOLATE BANANA MORNING BUZZ SMOOTHIE

Ingredients:

- 1 banana
- 1/2 cup coffee (hot or cold)
- 2 tbsp dark cocoa powder
- 1 tsp cinnamon
- 1 scoop protein powder (hemp, whey, casein, soy, or multi-source plant protein)
- 1 cup milk or non-dairy beverage

How to Make It:
Mix all ingredients into a blender and enjoy!

Miniature Fruit Tarts 

Ingredients:

 - 1 1/2 teaspoons light corn syrup
- 1 teaspoon cornstarch
- 1 beaten egg white
- 3Brush pastry rounds with egg white. Stir together pecans and the 1 tablespoon sugar. Sprinkle pecan mixture over pastry shapes. Or, use the pearl sugar instead of nut mixture.
- 2 cups assorted fresh fruit (such as peeled, thinly sliced, and halved
- 1 (8 oz.) carton lemon yogurt
- cup orange juice
- 2On a lightly floured surface roll pastry slightly to flatten creases. Cut puff pastry circles and diamonds using 2-inch cutters. Place on an ungreased baking sheet.
- 1 (17 ¼ oz.) pkg. (2 sheets) frozen puff pastry, thawed

How to Make It:
In a small mixing bowl stir together yogurt and pudding.
Bake in a 375 degree oven for 12 to 14 minutes or until puffed and golden. Transfer pastries to a wire rack. Cool.
Some pastry shells may bake into uneven shapes. If this happens, split the shells so the top half is even all the way around. Then, trim the bottom half so the sides are even. When you assemble the tart, it will stand upright --On a lightly floured surface roll pastry slightly to flatten creases.

Spread about 1 teaspoon of the yogurt mixture on the bottom half of each round. Arrange fresh fruit atop pudding.
Brush the fruit with orange juice mixture. Replace tops. Cover and chill for 1 to 24 hours.To tote, arrange the tarts in single layers in shallow covered plastic containers or baking pans. Cover the pans with foil. Stack the pans in a cooler. Makes about 45.

Peanut Butter Banana Smoothie

Ingredients:

- 2 bananas
- 4 tablespoons peanut butter
- 6 dried dates
- 2 tablespoons cocoa powder
- ice
- water

How to Make It:
Fill the blender with some cold water and several ice cubes.

Add the bananas, peanut butter, dates, and cocoa powder.Blend until smooth.

Add more water until you reach the desired thickness.
 

Greek Shrimp Orzo

Ingredients:

- 5 large leaves of basil, chiffonaded
- 1/2 pound Feta cheese, 1 lb
- 1 cup chopped green onions (green and white parts)
- 1/2 cup freshly-squeezed lemon juice
- 1/2 cup + 1 tbsp extra-virgin olive oil, divided
- 3/4 pound (12 oz.) orzo (rice-shaped pasta)
- 1 cup chopped Italian parsley
- 1 pound raw large shrimp, peeled and deveined
- Salt and pepper

How to Make It:
Combine lemon juice and 1/2 cup olive oil.Bring large pot of salted water to a boil over high heat.
Pour in orzo and cook until al dente.
Drain the pasta, pour into a large serving bowl, and immediately add lemon juice/olive oil mixture. Stir well.
Heat a large skillet over medium-high heat and add 1 tbsp olive oil.
Add shrimp, salt and pepper, and cook for about 2 minutes, or until the shrimp are just done.
Add the shrimp, green onions, parsley, and feta to the orzo mixture. Stir well.
Let the orzo sit for 1 hour. If you make it earlier in the day, cover and refrigerate. Bring to room temperature before serving.Just before serving, add the basil and gently mix. If desired, serve over a bed of spinach or lettuce.

Simple Yummy Salmon Sandwich

Ingredients:

-  2 slices of Chaffles or Waffles
- 1 Tlbs. Mayonnaise
-  Salmon Fillet or Smoked Salmon
- Lettuce Leaves

Preparation

Toast Waffle bread and spread mayo on each slice. Place 1 piece of cooked salmon on each piece of bread and top with top halves of buns.
Enjoy!

Strawberry Smoothie

Ingredients:

1 cup milk of choice or water
1/4 cup Greek yogurt
1/2 C of crushed ice
2 cups frozen strawberries
1 ripe banana
Liquid Stevia to taste

Preparation

Mix all ingredients together in a blender.  Blend until smooth.

Enjoy!
